Rice
Pinch of salt and ground cumin
Chicken Broth
Cilantro and lime juice
Cilantro Lime Rice for Two
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
INGREDIENTS:
2 cups chicken broth
1 cup rice
pinch of salt
¼ teaspoon ground cumin
2 tablespoons chopped cilantro
2 tablespoons lime juice
DIRECTIONS:
In a small saucepan, combine the chicken broth, rice, salt, and ground cumin. Over medium-high heat, bring mixture to a boil. Once boiling, cover with lid then reduce heat to medium-low. Let simmer for 20 minutes.
Once the rice is cooked, add in lime juice, and chopped cilantro. Fluff with a fork, and serve warm.
