If you know me, you know I enjoy breakfast foods quite a bit. I obviously love to have it during breakfast time, but they also go great during lunch and dinner time as well. Pancakes, waffles, french toast, cereal, oatmeal, you name it!
Pancakes are something that take little time and make everyone happy. Homemade is the best, even though it takes a little extra time and effort, it’s nice knowing that you can tweak this recipe if you wanted to.
This recipe makes 4-5 medium sized pancakes.
Pancakes for Two
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
INGREDIENTS:
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 egg
1 cup milk
1/2 teaspoon vanilla extract
1 tablespoon butter, melted
OPTIONAL: 1/4 cup fruit (blueberries, mashed banana, strawberries, etc.)
DIRECTIONS:
In a medium bowl, combine all of the dry ingredients (flour, baking powder, salt, and sugar) and mix.
In a small bowl, combine all of the wet ingredients (egg, milk, vanilla extract, and melted butter) and mix well.
Pour the wet ingredients with the dry ingredients and whisk together until combined, and no lumps remain. If you are adding fruit, add now and mix.
Coat a large skillet or griddle with cooking spray or oil, and heat over medium-high heat.
Pour 4 equal circles of batter into the skillet or griddle and cook until bubbles are shown on the top. Flip the pancakes over, and cook until the bottom turns golden brown. Each side should only take a couple of minutes.
Serve with your favorite pancake toppings such as whipped cream, fruit, syrup, powdered sugar, etc. Enjoy!
