I absolutely love no bake cookies, and have always loved them. The best part is that they only take about 10 minutes total to make, and require little clean up.
These cookies are an oldie but a goodie. Plus they are so delicious, quick to make, require minimal ingredients, and there is no need for an oven. You can make them right on the stove top.
This recipe makes about 4 cookies and is perfect for when you are desperately craving something sweet and chocolatey, but do not have a lot of time to make a larger batch of cookies. Lastly, these cookies do not need to be refrigerated. Once they are set, the cookies can be kept at room temperature.
Small Batch, Peanut Butter and Chocolate No Bake Cookies
Prep Time: 2 minutes (to gather your ingredients)
Cook Time: 8 minutes
Total Time: 10 minutes
INGREDIENTS:
1/2 cup sugar
2 tablespoons butter
2 tablespoons milk
1 1/2 tablespoon cocoa powder (use 2 tablespoons if you prefer a dark chocolate taste)
2 tablespoons peanut butter
3/4 cup oats (I prefer to use quick cooking oats)
DIRECTIONS:
In a small saucepan, mix sugar, butter, milk and cocoa on medium heat. Heat to boiling.
Once the mixture is boiling, count for 1 minute. No more, and no less. Then remove from heat.
Stir in peanut butter and oatmeal.
Once well mixed, drop by spoonfuls onto wax paper.
TIPS:
If you don’t boil the mixture for a full minute, the cookies may not set and may be sticky and gooey. And if you boil for too long, your cookies may be hard and fall apart.
