Just hearing the word enchiladas gets me thinking about the good times with family, friends, and forever memories. Whenever we go to a Mexican restaurant, my default choice is enchiladas. I don’t know why, but they have been my favorite go-to for a long time.
I love this recipe because it only calls for a few ingredients: tortillas, salsa, enchilada sauce, beef, and cheese. Does it get any better than this? With a smaller budget to work with, this really helps with only needing a few ingredients, but you are not sacrificing taste. This recipe is so good and packed with flavor, and takes minimal time to cook too!

Step 1: Brown your choice of meat. (I chose beef this time). Mix in your choice of salsa. (My husband and I enjoy Newman’s Own: Mango Medium Salsa)
Step 2: Prepare a baking dish by greasing the pan with non-stick cooking spray and with enchilada sauce.
Step 3: Prepare enchiladas

Prep Time: 20 minutes
Cook Time: 30-35 minutes
Total Time: 50-55 minutes
INGREDIENTS:
1 lb. ground beef
1 cup salsa
1 (10 ounce) can of enchilada sauce
8 flour tortillas
2 cups cheese
DIRECTIONS:
Preheat the oven to 350 degrees and spray a 9x13 baking dish with non-stick cooking spray.
In a skillet, brown the ground beef over medium heat.
Once cooked and no longer pink, stir in salsa and cook until heated through. Remove from heat.
Pour about 1/2 of the enchilada sauce into the baking dish.
Prepare the enchiladas by adding about a quarter cup of the mixture down the middle of the tortilla and a pinch of cheese, then roll tightly and place in the baking dish with the seam facing down, so they don't unroll.
Once all enchiladas are prepped in the baking dish, pour the remaining enchilada sauce over them and sprinkle the remaining cheese over.
Wrap the baking dish with aluminum foil and bake for 30-35 minutes.
