Who loves tacos? And who loves pasta? I am totally a sucker for both and this recipe is the best of both worlds! It definitely is a great spin on your regular pasta recipe and is probably one of our family favorites!
And the best part?
It’s a ONE POT RECIPE! Yes! You read that right! ONE POT! I love these types of recipes, because that means less clean up afterwards.
Here are the steps:
Step 1: Brown the meat
Step 2: Stir in the taco seasoning
Step 3: Add in all the other ingredients (except the cheese) and cook until the pasta is tender.
Step 4: Once the pasta is tender, add in the cheese and stir.
Step 5: Enjoy!
TIPS:
Tip #1: The best part about this recipe is you can choose which type of salsa you would like. This time around, we added in a medium mango salsa, and it added so much flavor!
Tip #2: You can use either garden rotini, or regular rotini. Garden rotini pasta has green, yellow, and red noodles, which adds more color, and there is no taste difference.
Taco Pasta for Two
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
INGREDIENTS:
Half pound Ground turkey, or beef
1/2 teaspoon salt
Pinch of black pepper
1.5 ounces of taco seasoning
4 ounces of rotini pasta, uncooked
1 cup water
1/2 cup of salsa
1 cup of shredded cheese
OPTIONAL TOPPINGS:
Chopped tomatoes, avocado, tortilla chips, chopped cilantro
DIRECTIONS:
Preheat a medium pot over medium heat. Add ground beef, salt, and pepper, and cook stirring occasionally until cooked thoroughly. Drain grease.
Stir taco seasoning into ground beef, then stir in pasta noodles, water, and salsa. Bring mixture to a boil. Stir, cover, and reduce heat to low. Simmer for about 15-20 minutes until pasta is tender.
Turn off heat and stir in shredded cheese. Serve with additional toppings if desired.
