This recipe is one of those that is such a great lunch and picnic option. It is also a great recipe to make extra servings and pack lunches, so you can grab-and-go for the day.
I have had chicken salad that had many different ingredients, including eggs, olives, bell peppers, pasta, onions, etc. But today I am going to share with you the classic chicken salad recipe. This recipe is very versatile, so feel free to mix and match any extra ingredients.
You can serve chicken salad as a sandwich, or with lettuce as a wrap, or you could also have it as a snack with some crackers. Typically we like to have it as a sandwich.
Classic Chicken Salad
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
INGREDIENTS:
1 cup of shredded chicken
1/3 cup seedless grapes, halved
1/3 cup celery, chopped
1/4 cup miracle whip or mayo
Pinch of salt and pepper
Croissants, lettuce, or crackers (whichever you prefer)
DIRECTIONS:
Prepare fruits and vegetables, slicing and/or dicing as needed.
Combine all ingredients in a medium sized bowl. Stir until well blended.
TIPS:
If you choose to boil your chicken beforehand, this will aid in making the recipe much faster. You can use canned chicken (be sure to drain it), rotisserie chicken, or boil some chicken breasts. I typically like to boil my chicken beforehand and use the shredded chicken for a few different recipes.
