Chicken Parmesan is a meal that makes me feel like a top chef. It’s not hard, and it is so tasty. This recipe also is so tender, and has lots of flavor. It’s perfect when you do not have a lot of time to cook, or even for a date night.
It does not require a lot of time spent in the kitchen, which is always a nice touch. Just try it, you won’t be disappointed.
Baked Chicken Parmesan for Two
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
INGREDIENTS:
1 large (or two small) boneless, skinless chicken breast
1 tablespoon vegetable oil
Salt
Pepper
1 cup pasta sauce
1/3 cup Italian style bread crumbs
2 teaspoons minced garlic
1 teaspoon Italian seasoning
2 slices of Provolone or Mozzarella cheese
DIRECTIONS:
Preheat the oven to 350 degrees, and grease a cookie sheet.
If using large chicken breasts, cut them in half longways. Brush chicken on both sides with oil, and season with salt and pepper. Then toss the chicken in the bread crumbs to coat on both sides.
Lie the chicken on the cookie sheet and bake for 17-20 minutes until cooked thoroughly.
While the chicken is cooking, combine the pasta sauce, garlic, and Italian seasoning in a small saucepan and cook on medium heat until hot.
When the chicken is finished, remove from the oven and switch the temperature to the broil setting. Top each chicken breast with 1/2 cup of pasta sauce and one slice of cheese. Put the chicken back in the oven and broil for 2-3 minutes until cheese is melted.
Feel free to serve with veggies or over spaghetti noodles and enjoy!
